Eating Around: Saffron Gilds the Lilies
TABERNA DEL ALABARDERO debuts the first of its Spanish ingredient tasting menus this month, beginning with one of Spanish cuisine's most prized spices: saffron.
"I thought it would be fun to highlight one ingredient and to play with it in different forms and textures," said chef Santi Zabaleta. Menu items include cauliflower saffron soup served with diver scallops and clam gelee, seared saffron pineapple with foie gras, langoustines with saffron Valencia rice and a white-chocolate saffron lollipop.
The menu is $78 per person and is available through March. "We'd like to showcase a different ingredient each month: Spanish olive oils, Spanish olives, cheeses," said Zabaleta. "There are so many possibilities."
